Easy Mocha Rum Cheesecake Recipe

Serves: 10-12

Ingredients:
For Base:
175g Dark Chocolate, finely crushed
75g Butter, melted
½ tsp Mixed Spice

For Filling:
500g Cream Cheese
125g Caster Sugar
125g Dark Chocolate
150ml Sour Cream
2 tbsp Dark Rum
1 tbsp Corn flour
1 tbsp Coffee Granules
3 Eggs

For Decoration:
Dark Chocolate, grated
Cocoa Powder for dusting
Chocolate Coated Coffee Beans

Method:

·         First of all, preheat the oven at 150 degree Celsius.
·         Take the cake tin and grease it lightly with oil or butter.
·         Mix biscuits along with mixed spice and butter in a mixing bowl and mix it well and place this mixture at the base of the baking tin.
·         Bake the mixture in oven for about 10 minutes and then cool it off.
·      Prepare the filling by melting chocolate in a bowl over a double boiler at sim heat, while stirring it continuously.
·         It’s time to combine corn flour with cream cheese, sugar, sour cream and eggs in a large bowl to make a smooth batter.
·         Now, pour this mixture over the prepared base and tap the tin sharply to set the air bubbles and bake it for about 45 minutes to 1 hour until the top of the cake is set.
·         When baked, remove it from the oven and cool it off in a refrigerator for about 5 hours.
·         Prepare the decoration by cutting the cake into half using a sharp knife.
·         Now, sprinkle the grated chocolate along with coated coffee beans and dust the cocoa powder.
·         Your delicious Mocha Rum Cheesecake is now ready to be served.

3 eggs

2 cups white chocolate chips
1 package frozen raspberries
3 packages cream cheese, softened
2 teaspoons cornstarch
3 tablespoons white sugar
2 tablespoons white sugar
1/ 2 cup white sugar
1 teaspoon vanilla extract

Method:
· Mix cookie crumbs, 3 tablespoons sugar and melted butter in a bowl.
· Place the mixture in the bottom of a 9-inch springform pan.
· Combine raspberries, 2 tablespoons sugar, cornstarch and water. Boil the mixture for 5 minutes or until the sauce is thick. Strain the sauce through a mesh strainer to remove seeds.
· Now, preheat the oven at 325 degrees Celsius.
· Take a double boiler and melt white chocolate chips with half-and-half while stirring occasionally until it is smooth.
· Take a large bowl and mix cream cheese, 1/ 2 cup sugar until smooth. Now, beat in eggs one by one.
· Add vanilla and melted white chocolate. Pour half of the batter over the crust. Sprinkle 3 tablespoons of raspberry sauce over the batter.
· Pour the remaining sauce over the top and swirl the batter with the tip of a knife creating a marbled effect.
· Bake the mixture for 55 minutes or until the filling is set.
· Cool and cover with plastic wrap and refrigerate for at least 8 hours before removing from pan.
· Serve chilled with raspberry sauce.

· Make Rum Glaze by combining butter or margarine, 1/ 4 cup rum, 1/ 4 cup water and sugar. Boil this mixture once and then cook for just 2 minutes.

· Now, pour this mixture immediately over still warm cake and serve after setting it for 10 to 15 minutes.
