Valentine Chocolate Covered Cherries Recipe
An occasion as sweet as Valentine’s Day is incomplete with chocolates, but they are available everywhere, so why not try out something different? Try making your own home made Valentine Chocolate Covered Cherries. Our tried and tested Valentine Chocolate Covered Cherries Recipe will help you make those tempting chocolate covered cherries.
Serves: 20 people
Ingredients:
60 maraschino cherries with stems
3 tablespoons corn syrup
3 tablespoons butter, softened
2 cups sifted confectioners’ sugar
1 pound chocolate confectioners’ coating
Method:
· First of all, drain the cherries and dry by setting on paper towels.
· Take a medium bowl and mix butter and corn syrup until it forms a smooth paste. Then, add confectioners’ sugar and knead to form dough. Chill if it is required to soften it.
· Now, wrap each cherry in about 1 teaspoon of this dough and chill till it is firm and sets.
· Now, melt the confectioners’ coating in a double saucepan over low hear and dip each cherry with its step and place it on a waxed paper. Chill the dipped cherries until they are completed set.
· Store in airtight container in a cool place and consume in maximum 2 weeks.

2 cups white chocolate chips
1 package frozen raspberries
3 packages cream cheese, softened
2 teaspoons cornstarch
3 tablespoons white sugar
2 tablespoons white sugar
1/ 2 cup white sugar
1 teaspoon vanilla extract
Method:
· Mix cookie crumbs, 3 tablespoons sugar and melted butter in a bowl.
· Place the mixture in the bottom of a 9-inch springform pan.
· Combine raspberries, 2 tablespoons sugar, cornstarch and water. Boil the mixture for 5 minutes or until the sauce is thick. Strain the sauce through a mesh strainer to remove seeds.
· Now, preheat the oven at 325 degrees Celsius.
· Take a double boiler and melt white chocolate chips with half-and-half while stirring occasionally until it is smooth.
· Take a large bowl and mix cream cheese, 1/ 2 cup sugar until smooth. Now, beat in eggs one by one.
· Add vanilla and melted white chocolate. Pour half of the batter over the crust. Sprinkle 3 tablespoons of raspberry sauce over the batter.
· Pour the remaining sauce over the top and swirl the batter with the tip of a knife creating a marbled effect.
· Bake the mixture for 55 minutes or until the filling is set.
· Cool and cover with plastic wrap and refrigerate for at least 8 hours before removing from pan.
· Serve chilled with raspberry sauce.

· Take a large bowl and combine egg yolks and sugar. Whisk together until fluffy. Then, whisk hot milk mixture slowly in the eggs.
· Pour the whisked mixture in a saucepan and cook over medium heat for about 3 minutes stirring it continuously. Don’t boil the mixture.
· Strain the mixture to remove cloves and let it cool for about an hour.
· Now, stir in rum, cream and 2 teaspoon vanilla along with nutmeg. Refrigerate it overnight before setting.
· Serve chilled.
